Maria and her daughter Sofia took a stroll in the meadows outside of their village one sunny summer day. They were out for a walk when Maria saw a little tree. Close inspection revealed that the tree was loaded with unusual white fruits.
Maria was cautious at first since she had never cooked with a white aubergine, but at Sofia’s persuasion, she gave it a go. A few eggplants were pulled off the tree and taken inside.
Once back in the kitchen, Maria looked for the best aubergine recipe she could find online. She settled on aubergine parmesan, an old favourite of hers from Italy.
She then topped the eggplant slices with tomato sauce and mozzarella cheese before baking the dish until the cheese was melted and the sauce was bubbling. After finishing their masterpiece, Maria and Sofia sat down to eat it.
The aubergine parmesan came out delicious, much to Maria’s relief. Tender and somewhat sweet, the white eggplants went well with the zesty tomato sauce and melty cheese.
Every summer since then, Maria has made it a point to return to the field to see whether the white aubergine tree is still there.
She always discovered its singular and delicious fruit on it in the summer. The eggplant parmesan that Maria often made from scratch was a family favourite.
After finding the white aubergine tree, Maria and Sofia were able to experiment with new flavours and techniques in the kitchen. It was a reminder to Maria that awe-inspiring discoveries may be made in the unlikeliest of locations.
