One of my favorite foods to eat is a well-balanced salad. I love all salads, but I especially love the salads that have a little bit of everything in them. That’s exactly what this broccoli cauliflower salad is.

It’s fresh and healthy. It’s also an easy and healthy recipe to make. Whether you’re eating it as a side dish or as its own meal, this is a salad that I know you’ll love.

Ingredients

1 head broccoli chopped into bite sized florets
1 head cauliflower chopped into bite sized florets
1 cup colby jack cheese cubed
½ small red onion chopped
1 cup mayonnaise
½ cup sour cream
1 tablespoon red wine vinegar
2 teaspoons sugar
1 teaspoon dried parsley flakes
½ teaspoon sea salt to taste
½ teaspoon black pepper

Instructions

 

Add broccoli, cauliflower, cheese and onion to a large mixing bowl
In a small mixing bowl, mix the mayo, sour cream and vinegar until smooth. Add sugar. You can add more if you think it needs it
Add salt, pepper and parsley and stir until well blended
Pour dressing over salad, and stir until well combined. Cover and refrigerate at least one hour before serving

Notes

You can leave sugar out completely or add more after tasting.

Keep salad refrigerated. It keeps well for up to 4 days.
